Ingredients

  • 500g Victorian minced beef
  • 1 paneer cheese, cubed
  • 1 onion, chopped
  • 5 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tomato, chopped
  • ½ pack Italian mix lentils (soaked overnight)
  • 15 Victorian grapes
  • 200ml almond milk
  • 4 tbsp tomato paste
  • 100ml water
  • Salt & pepper
  • Salted butter
  • Garnish: Parsley, Parmesan cheese

Directions

Step 1

Mix salt and pepper into the minced beef, stuff with paneer, shape into meatballs, and sear in butter until browned. Set aside.

Step 2

In the same pan, sauté onion, garlic, bell pepper, and tomato until fragrant. Add lentils and water, simmer for 20 minutes.

Step 3

Stir in tomato paste and almond milk, then add the meatballs.

Step 4

Simmer again, then garnish with parsley and Parmesan before serving.
